In an HVAC system, a thermistor is a specific kind of resistor which has a resistance that changes as it depends on the amount of, or lack thereof, heat. They tell the system control board when a certain temperature in increasing or decreasing. The heating and cooling system interprets the temperature throughout the whole system to make a decision on what needs to be done.
